Maruyama Coffee, Karuizawa, Nagano, Japan

Founded by Kentaro Maruyama in 1991, Maruyama began as a small micro-roaster in Karuizawa, Japan. Hoping to meet and learn from like-minded individuals, he joined several other fledging roasters to create an email listing called Mikatajuku, “a free school of coffee supporters.”

Today, Kentaro Maruyama is an internationally respected authority on coffee, serving as chairman of the Cup of Excellence competition. He owns and operates eight Maruyama locations throughout Japan and spends nearly 150 days of the year abroad, continuing his search for the highest quality beans. He describes the roasting process as ’an expression‘ of the coffee, putting many long hours into educating and instructing his staff. He aims to express as many flavors as possible, relying on his sense of smell and the latest technology, throughout the roasting process.

Recently, acclaimed barista Hidenori Izaki of Maruyama Coffee won the 2014 World Barista Championship in Rimini, Italy. After learning from Kentaro the importance of working with the producer, he created a special espresso blend from Monte Copey – the product of a two-year collaboration with the producer.
